Our goal is to create "Orchard-Focused" ciders that pay particular attention and respect to the varieties of apples used. The world's finest ciders are produced using apples grown for the express purpose of hard cider production, not for the tabletop or grocery store. By using wonderful, unique American varietals like Roxburry Russet, Ashmead's Kernal, Northern Spy and more we can create flavorful, nuanced ciders that rival the finest glass of wine in their balance of acididy, tannin and sweetness. We only produce cider during the harvest months between October and December, we ferment them slow and cold to preserve flavor and aroma, we use minimal to no sulphite and we use 100% Ohio grown apples from farms we know and trust. We never use concentrated apple juice or create 'apple ales' loaded with malt products.
We began producing small batches of award winning cider and cyser (apple mead) in 2015 and in 2018 were able to quadruple our production with the purchase of two 2,000 liter dedicated cider fermenters.
In order to increase transparency and cider education among our customers we have decided to publicly share our production details. We hope you find this information useful and that it leads you to question “what exactly is in my glass of cider and where did it come from?” We have included all batches where we were able to work closely with the orchards.

If you’ve been enjoying our ciders for the last few years in our taprooms, you may notice that some are missing from the list above. That is because, unable to source directly from a local orchard, we made some ciders with a culinary apple juice blend from NY, which while of good quality, did not have specifics on exactly which varieties were used.
