Mead is a wonderful drink made primarily from honey but that has the ability to incorporate any number or combination of fruits, spices, herbs and other ingredients in creating one-of-a-kind new beverages. While mead has a rich and fascinating history, we aim to create modern, innovative mead using the best practices known to us and geared towards a sophisticated palate. We only use raw honey, the majority of which is sourced from farms within an hours drive from us. We believe good mead needs time to ferment and mature and ours rest at least six to twelve months in stainless steel tanks or oak barrels before being ready to serve.
We've been enamoured with creating and sharing mead since our first 5 gallon batch many years ago and are set to produce over 2,000 gallons in 2018.
